Salads
A lovely refreshing dish to serve on tostados or as a salad topper. Or serve it up in martini glasses as a fun appetizer paired with corn chips and a frosty margarita!
Makes 6 servings
6 SUNSET® Campari® Tomatoes, coarsely chopped
12 oz (2 cups) peeled cooked large shrimp, coarse cut
1 cup small-diced SUNSET® Cucumbers
1/4 cup small-diced red onion
1/4 cup coarsely chopped fresh cilantro
3 Tbsp fresh lime juice
1 Tbsp vegetable oil
1/2 tsp ground coriander
1/2 tsp kosher salt
2 tsp hot sauce
Garnish: lime wedges, fresh cilantro sprigs and diced avocado if desired
Place tomatoes, shrimp, cucumber, red onion and cilantro in a large bowl. In a small bowl whisk together the lime juice, oil, coriander, salt and hot sauce. Drizzle over shrimp mixture and gently mix to combine.
