This tasty appetizer is a snap to make! Crunchy cucumber is the perfect contrast to the creamy smoked salmon filling.
Makes about 32 to 36 pieces
4 SUNSET® Mini Cucumbers
3 oz boneless, skinless, hard-smoked salmon, flaked (about 1/2 cups flaked)
3 oz cream cheese, softened
Garnish: sliced fresh chives or tiny dill sprigs
Cut the ends off the cucumbers. Then cut each cucumber into 16 to 18 slices. You should end up with 64 to 72 slices. Set aside.
In a small bowl mash the salmon and cream cheese together with a fork until combined well.
Place a scant teaspoonful of the mixture on a cucumber slice then top with another cucumber slice, pressing down slightly to make a little "sandwich." Repeat with remaining slices and mixture.
Top each one with a tiny sprig of fresh dill or a sprinkle of chives if desired.
