Sensational with grilled salmon, or serve up with your favorite sandwich.

Makes 1 quart

2 SUNSET® Cucumbers, sliced
1 small red onion, thinly sliced
1/2 cup cider vinegar
3 Tbsp sugar
1/2 tsp celery seed
1 Tbsp chopped fresh dill (or substitute 3/4 tsp dry dill weed)
1/2 tsp salt
1/2 tsp fresh-cracked black pepper

Rinse onion in a strainer under cold water for 3 minutes to remove any harshness. Drain well.

Meanwhile, in a large bowl, whisk vinegar, sugar, celery seed, dill, salt and pepper until sugar is dissolved. Toss in cucumbers and onion. Let marinate, refrigerated, for at least 15 minutes before serving.
