This quick, easy and healthy pizza is just the thing for a busy weeknight dinner!
Makes 1 12” pizza
1/2 lb SUNSET® Splendido™ Grape Tomatoes
(10 – 12 tomatoes), halved
1 cup ricotta cheese
1 Tbsp dry Italian salad dressing mix
1 (12”) pre-baked pizza crust, such as Boboli
1/2 cup chopped red onion
1 1/2 cups (4 oz) shredded four-cheese or Italian-style cheese blend
salt and pepper, optional
Optional toppings: cooked sausage meat, olives, artichokes, prosciutto, salami
2 Tbsp torn mixed fresh herbs, such as basil, Italian parsley, oregano and chives
Preheat oven to 450°F.
In a small bowl combine ricotta cheese and dry dressing mix. Place pizza crust on a baking sheet. Spread ricotta on pizza crust to 1” from edge. Sprinkle with red onion then cheese blend. Place tomato halves evenly over pizza. Sprinkle with salt and pepper if desired. (Add other toppings at this time if using.) Bake for about 20 – 22 minutes or until cheese is bubbly. Remove from oven and scatter with herbs. Cut and serve.
Chef’s Note: For a crisper crust, place pizza directly on oven rack to bake. For easy clean up, put a baking sheet on the lower rack to catch any drippings.
