This versatile marinated pepper mixture is splendid to accompany grilled chicken, cozy up to a steak, crown a burger or adorn a green salad.

Makes about 6 servings

1 SUNSET® Red Sweet Bell Pepper
1 SUNSET® Yellow Sweet Bell Pepper
1 SUNSET® Orange Sweet Bell Pepper

2 Tbsp red wine vinegar
3 Tbsp olive oil
2 tsp minced fresh garlic
1 tsp sugar
1/4 tsp salt
1 1/2 tsp dry Italian herb blend
1/3 cup thinly sliced red onion
2 Tbsp chopped fresh parsley (optional)

Stem and seed peppers, and cut into 1/4″ strips.

In a large bowl mix together vinegar, oil, garlic, sugar, salt and herb blend. Add the peppers, onion and parsley if using. Mix together well. Cover and refrigerate for at least 4 hours or overnight before serving. Stir often while marinating.

Chef's Notes: If you like a little heat, add a sprinkle of chili flakes to the marinade.
