Mediterranean Grilled Fish with Kumato™ Tomato, Artichoke, Olive & Herb Toss

This fresh and healthy fish preparation is perfect for an easy entertaining get together.

Makes 4 servings

4 – 5 SUNSET® Kumato™ Tomatoes, cut into large chunks
1 Tbsp extra-virgin olive oil
5 canned artichoke hearts, cut into quarters, about 1 cup (non-marinated)
8 Castelvetrano olives, sliced off the pit
2 tsp very finely minced garlic
2 tsp fresh lemon juice
1 tsp very finely minced lemon zest
1 Tbsp chopped fresh oregano or basil

4 5-oz pieces of swordfish (or substitute tuna, mahi mahi or tilapia)
olive oil as needed
salt and pepper to taste


Heat grill to medium-high.

Combine all the ingredients for the Toss in a bowl and set aside.

Drizzle the fish with olive oil and season with salt and pepper on each side. Grill fish on each side until just done but not overcooked. (Cooking time will vary depending upon type and thickness of fish.) Serve fish topped with Kumato™ Tomato, Artichoke, Olive & Herb Toss.
