mini Kumato™ Quick-Fire Stir Fry

mini Kumato™ grape tomatoes make a flavorful addition to a simple stir fry. Serve with simple steamed rice.

Makes 4 – 6 servings

1/2 lb Sunset® mini Kumato™ Grape Tomatoes
2 Tbsp vegetable oil
1 large white onion, thinly sliced
1 lb large raw shrimp, peeled and deveined
3/4 cup stir-fry sauce
3 green onions, thinly sliced

Heat a wok or 12" nonstick sauté pan over high heat until very hot, almost smoking.

Swirl oil in the hot pan, then stir-fry the white onion for 1 to 2 minutes or until softened. Add shrimp and tomatoes and stir-fry on high for another 3 to 4 minutes, until shrimp is just cooked through. Mix in stir-fry sauce and sprinkle with green onions.
