Salsa - Sauces - Toppers
Great to have on hand to top salads, toss into pasta dishes or top pizzas. Also great as an appetizer served with goat cheese, olives and crackers or crostini.
Makes 1 cup
2 pints SUNSET® One Sweet™ Tomato
1 Tbsp extra-virgin olive oil
1 Tbsp chopped fresh thyme or 1/2 tsp dried thyme
1/2 tsp kosher salt
1/4 tsp fresh-ground black pepper
Preheat oven to 250°F.
Cut tomatoes in half crosswise. In a large bowl, gently mix tomatoes, oil, thyme, salt and pepper to coat tomatoes evenly. Lay out tomatoes, cut side up and spaced slightly apart, on a nonstick baking sheet. Bake for about 2 1/2 to 3 hours, until dry but still soft, not crispy. Cool. Store covered and refrigerated for up to 5 days.
