

Appetizer
The flavor achieved by roasting your own peppers is worth the effort. Use in salads, sandwiches, omelets, to top grilled meats, or serve with goat cheese and crostini as an appetizer. You may just want to do a double batch!
Makes about 1 cup
1 pkg SUNSET® Red, Yellow or Orange Sweet Bell Peppers or 1 pkg of SUNSET® One Sweet™ Pepper
Grilling Method:
On a hot grill, cook whole peppers for 4 – 5 minutes on each side until skins are charred black and blistered. Place peppers in bowl and cover with plastic. Let sit until cool. Pull away and discard stem and seeds; peel skin off. Slice peppers into strips. Refrigerate until ready to use.
Oven Roasting Method:
Preheat oven to 450°F. Arrange peppers on a baking sheet, and roast for 20 – 25 minutes, or until skins have darkened and blistered. Place peppers in bowl and cover with plastic. Let sit until cool. Pull away and discard stem and seeds; peel skin off. Slice peppers into strips. Refrigerate until ready to use.
