Slow-simmered Tomato Sauce

Salsa - Sauces - Toppers

This go-to sauce can be spooned over chicken, meats or fish, or tossed with pasta.

Makes 3 cups

2 lb SUNSET® Romana
3 Tbsp olive oil
1 Tbsp minced fresh garlic
1/4 – 1/2 tsp red chili flakes
1/3 cup red wine
1/2 cup chicken or vegetable broth
1 tsp dry Italian herb blend
1 tsp sugar
3/4 tsp salt

Dice the tomatoes. Heat oil in a medium saucepan over medium-high heat. Add garlic and chili flakes, and cook for 1 minute until fragrant, stirring constantly. Immediately add wine, tomatoes, broth, Italian seasoning, sugar and salt. Bring to a boil then reduce the heat and simmer for about 40 to 45 minutes, or until a nice saucy consistency, stirring occasionally and checking the heat to keep the sauce at a gentle simmer.

Chef's Notes: You can easily enhance this sauce by adding other flavorings such as: pancetta or bacon, pickled jalapeños, olives, gorgonzola cheese, sautéed mushrooms, roasted peppers, etc.
