Excellent over pasta or rice, folded into an omelet, or stuffed in a toasted hoagie roll for a hearty sandwich!

Makes 4 – 6 servings

4 SUNSET® Ancient Sweets™ Red Peppers
5 large (about 20 oz) Italian sausages
1 Tbsp olive oil
1 large onion, thinly sliced
1 Tbsp minced garlic
2 Tbsp balsamic vinegar
3/4 cup prepared marinara sauce
1 Tbsp chopped fresh oregano (optional)
1/2 tsp salt
fresh-ground black pepper

Slice the peppers into rings and set aside.

Bring a pot of water to a boil, add sausages and simmer for about 10 minutes, or until cooked through. Drain and cool and cut into 1" pieces.

In a large non-stick 12" sauté pan, heat oil on medium-high heat. Sauté onions for about 4 minutes, stirring often or until soft. Then add sausage and peppers, and sauté for 15 minutes more or until peppers are softened. Add garlic and cook 2-3 minutes. Add vinegar and let cook 1 minute, then add marinara sauce, oregano and salt. Season with pepper to taste. Cook till sauce is hot.
