Serve up with your favorite entrée such as roast chicken.
Makes 4 – 6 servings
6 SUNSET® One Sweet™ Pepper
1 cup dry orzo pasta
1 Tbsp honey
2 Tbsp lemon juice
1/2 tsp salt
3 Tbsp butter
1/2 cup diced red onion
1/3 cup chopped parsley
Slice the peppers into thin rings and set aside.
Cook the orzo in boiling water for 8 minutes, or until tender. Drain well after cooking.
Meanwhile, in a medium bowl, whisk together honey, lemon juice and salt, and set aside.
Heat the butter in a 10" skillet over medium-high heat, and sauté the onion and peppers for 2 to 4 minutes, until just tender-crisp. Immediately add to the bowl with the honey mixture, add the cooked orzo and parsley, and toss together well. Serve hot.
