Tomato, Sweet Corn and Avocado Pico

Excellent with corn chips for scooping or as a topper for grilled salmon, shrimp or chicken.

Makes about 3 cups

1 (6-oz) package SUNSET® Champagne™ Cocktail Tomatoes
2 Tbsp fresh lime juice
1/4 cup finely minced red onion
1/4 cup coarsely chopped fresh cilantro
1/2 tsp salt
1 small fresh hot pepper, finely minced
2/3 cup frozen corn, defrosted
1 ripe avocado, diced

In a large bowl mix together lime juice, onion, cilantro, salt and hot pepper. Fold in tomatoes, corn and avocado.

Chef's Notes: If fresh corn is in season, cut kernels from the cob and microwave, covered, for about 1 minute. Or grill 1 ear husked corn and then cut it off the cob.
